WEEKLY WW FREESTYLE MEAL PREP| ZUCCHINI HASH, EGGPLANT LASAGNA, & MORE!!!

WW Freestyle Meal Prep! YUM! ?BREAKFAST Zucchini Hash Casserole Makes 6 slices and 1 is 4sp! what you need: - 1 zucchini, diced - 4 mini orange peppers, diced - 1 white onion, diced - 2 1/2 cups hash browns - 10 eggs - 4 slices turkey bacon - 1/3 reduced fat feta cheese - about 1/2 cup sun dried tomatoes - 1/4 cup light sour cream - seasonings salt n pepper, garlic + onion powder how to make: step1: cut your veggies into dice size pieces, then cook your bacon in the microwave on 3 minutes and 30 seconds covered with paper towel to get it crispy. step 2: in a bowl combine your diced veggies, feta cheese, cooked diced turkey bacon and toss together. step 3: next mix your 10 eggs and sour cream together along with your seasonings mix together until smooth, in a dish sprayed with olive oil spray add your 2 1/2 cups of shredded hash browns, then veggie mixture over the hash, next pour your eggs over the top and add a little more seasonings to the top of the casserole. Lastly Bake on 375 for 30-35 minutes or until eggs are fully cooked. Check center of casserole with a fork to make sure it is fully cooked before taking out of the oven. ??Lunch Tomato Soup with Shrimp Make 12 cups and 1 cup is 1sp of soup. Toppings are added sp depending on how much you add! what you need: - 2 1/2 lbs of roma tomatoes - 1 container of unsalted vegetable broth - 1 white onion, diced - 1 green pepper, diced - 6 garlic cloves - 1 cup fat free evaporated milk (8 oz) - 1/2 lbs of peeled medium size shrimp - i cant believe its not butter spray + olive oil spray - seasonings: for shrimp I used tonys seasoning, black pepper, and onion + garlic powder for soup I used black pepper + salt, onion + garlic powder, and dried basil + oregano! how to make: step1: Cut your roma tomatoes into dices, and your garlic. In a skillet add oil spray and your garlic and tomatoes and cook until tomatoes and the skin of tomatoes are soft ( this took about 13 minutes) , then add into a blender and blend until smooth. step2: Cut your white onion and green peppers into diced size pieces, in a skillet lined with spray cook the veggies until soft, once soft spray with i cant believe its not butter spray and set aside. step3: In a large pot add your tomatoes soup you blended up, and 1 cup fat free evaporated milk, and your seasonings. Mix together and place lid on and simmer for 5 minutes, then add your green peppers + onions to the soup. Place lid back on and continue to cook for another 10 minutes or so. step 4: lastly season your shrimp with tonys seasoning and black pepper, spray your pan and cook shrimp. in your bowl add shrimp, avocado, light sour cream, fat free cheddar cheese, and croutons! ?DINNER Eggplant Lasagna Makes 6 servings and 1 slice is 5sp! What you need: - 1 cup low calorie traditional pasta sauce - 2 large eggplants - 1/4 cup grated Parmesan cheese - 2 cups ricotta cheese made with part skim milk - 1 1/2 cup kraft fat free mozzarella cheese - seasonings: salt n pepper, garlic + onion powder, dried basil and oregano, and fresh parsley as topping How to make: Step 1 - Slice eggplant into thin slices then cut the slice down the middle. Step 2- In a bowl add 2 cups ricotta cheese and 5 tbsp of grated Parmesan cheese along with your seasonings and mix that together. Add 1 cup of pasta sauce into a measuring cup and set aside for later Step 3- In a casserole dish add a layer of eggplant, your ricotta cheese mixture, and pasta sauce.
