இறால் பிரியாணி | Prawn Biriyani | Iral Biriyani Prawn biriyani a.k.a. shrimp biriyani is popular across India. I have prepared this biryani with quickly available ingredients. For those who don't know Tamil language, you can follow the instructions below to prefer this yummy biriyani at your home during this lock-down even after this difficult time. Let's jump on to instructions! Ingredients: 750 grams Prawns / Shrimp cleaned 1 tbsp Red chilli powder 1 tbsp Garam masala powder 1 tbsp Coriander powder 1/2 tsp. Turmeric powder 2 tbsp. Ginger Garlic paste 1/2 lemon juice Salt For masala: 1 tbsp Red Chilli Powder 1 tbsp Garam masala Powder 1 tbsp Coriander powder 1/2 tsp. Turmeric powder 2 tbsp. Ginger Garlic paste 100 ml Yogurt / Curd 5 Gloves 5 Cardamom 10 black peppercorns 1 Cinnamon stick Rice: 750 grams long grain basmati rice Step by Step Instructions: Marinate Shrimp: In a large bowl, take 750 grams of shrimp/prawns and mix well with 1 tbsp of Chilli powder, 1 tbsp of coriander powder, 2 tbsp of garam masala, 1/2 lemon juice and salt. Mix well and allow it to marinate for min. 30 minutes. Rice: I have chosen long grain basmati rice for today's biriyani. As you know that basmathi rice has good fragrance / smell which adds major role to the biriyani. Pre-soak the rice for 1 hour. Fry Prawns / Shrimps: Fry prawns cooked until 70%. No need to well cooked the prawns because we are going to further cook them with the masala. Making masala: In the same pan, add sliced onions and saute until turned to golden brown color; then add 1 tbsp. ginger garlic paste and cook until no more raw smell of ginger garlic paste. After this add the remaining masala and tomatoes and saute them until become soft masala. Now, add 70% cooked prawns into this masala and mix well. Cook on medium heat for 3 - 5 minutes. Do not over cook the shrimp. Add coriander leaves and mint leaves and mix and cook for another 30 seconds. Now the prawn masala is ready. Cooking Rice: In a large pot, add enough water. Add bay leaves, oil, lemon juice and salt. Once the water starts boiling, add rice to the boiling water and cook until the rice is almost 70% done. Final touch : Layering Prawn / shrimp Biriyani We used pre-heated oven (350 degree) to make this dum biriyani. Sprinkle the ghee for the each layer with shrimp masala and add some coriander leaves + mint. Once all done, cover the pot with the tight fitting lid / cover with aluminium foil. Place the pot in the oven for 30 minutes. After 30 minutes, take out the pot from the oven and leave it to rest for 10 minutes. Now the tasty / yummy prawns biriyani is ready!
