Easy recipe: Tasty Chinese sweet and sour pork with pineapple 菠蘿咕咾肉

One of our favourite Chinese comfort food. Savoury, juicy, tender & absolutely mouth-watering. Best paired with some fragrant steamed Thai rice. Yummy! *Ingredients* 1/2 yellow pepper, cut into chunks (optional to use another colour of pepper) 1/2 large onion, cut into wedges Half cup of pineapple chunks 1/2 cup of ketchup 1/4 cup of water 1 tablespoon of apple vinegar 1/2 tablespoon of sugar 2 cloves of garlic, minced *Pork and Marinade* 300 g pork belly, cut into 1.5cm cube (can be replaced with chicken or fish) 1/2 tablespoon of soy sauce 1/2 tablespoon of sesame oil 1/2 tablespoon of oyster sauce 1/2 teaspoon of white pepper *Coating for Frying* 1 beaten egg 1 cup of all-purpose flour for coating *Instructions* 1. Marinade the pork belly with soy sauce, pepper, oyster sauce and sesame oil for at least thirty minutes. 2. Preheat the pot and add cooking oil for frying. 3. Coat the pork with flour then egg mixture and lastly with flour for frying: 4, When oil reaches 80 Celsius and above, start frying the coated pork until golden brown at medium fire, around five minutes. 5. After frying the pork, set aside to rest. 6. With a preheated wok or pan, add 2 tablespoons of cooking oil. 7. Next, add the minced garlic and onion. Stir fry until fragrance. Then add the pepper and pineapple. Stir fry for a couple of minutes until the veggies soften. 8. Add the fried pork belly, ketchup, sugar, apple vinegar, and water. 9. Stir the ingredients until all are well coated with the sauce and it is done. 10. And before serve, garnish with scallion.
